Peter is often described as a renaissance man – farmer, sculptor, engineer, coppersmith, environmentalist and bio-fuel chemist, and now the distiller of Australia’s first 100% Rye whisky, and the world’s first peated 100% Rye whisky.
Those who know of Peter's exploits at Belgrove Distillery will be aware that he has taken the path less travelled; opting to steer away from many the commercial constraints faced with conventional distilling. Peter built and operates the world's only Biodiesel powered still which is direct fired with local fish and chip oil. Grains are grown next to the distillery with the aim to keep things self-sufficient and sustainable. The rye grain he uses was originally planted by Peter at the tender age of fifteen to feed the property's livestock, descendants of the same grain now feed his still.
This is a field to glass model with the obvious benefit that all aspects are under his control. Being very focused on “minimal waste” he often sources surplus alcohol from other Tasmanian craft beverage makers and turns it into exciting new products.
World's best, Noma restaurant’s popup in Sydney took on 5 of Peter’s creations. . Jim Murray scored a Belgrove Rye whisky release 94.5 Liquid Gold.
Have we seen the best of this man? We think not, but there's no doubting the intrigue and excitement that comes with every glass.
