Having begun his career at a young age, Nathan O'Neill has gained a vast array of experiences from across the hospitality industry. Nathan has worked in venues including restaurants, gastro bars, pubs and nightclubs; and in 2010 was offered a chance to be part of and develop his skills at the award winning Merchant Hotel in Belfast. As part of the Merchant Hotel's team, Nathan saw himself progress to senior bartender during the period that the bar held its greatest accolade of worlds best cocktail bar. In more recent times, Nathan's flare for competitions has flourished. With competitions such as; 42 below, Kamm & Sons and Bacardi Legacy developing his skills not only but as a bar tender but as a host as well. In November 2012 Nathan represented the United Kingdom in the Beefeater 24 global competition and brought home the title of overall winner.

Following the competition, Nathan relocated to the hospitality capital of London to continue his career as part of the Rushmore Group; he spent a number of years tending bar and hosting at the prestigious Milk and Honey.

During his time at Milk and Honey, Nathan was a UK finalist for the Diageo World Class, shortly after Nathan had the opportunity to join the newly formed Mr Lyan group assisting with the opening of White Lyan before going on to become the head bartender of Dandelyan at the Mondrian Hotel part of the Morgan's hotel group.

The success of opening the hotels three outlets; including sea container restaurant and rumpus room rooftop bar; led to worldwide acclaim throughout the media. In Dandelyan'ss first year of opening it won "Worlds best new bar" at Tales of the Cocktail following on from White Lyan winning the same award the previous year.

The last part of 2015 has been incredibly busy for Nathan with a transatlantic relocation to New York to take up the very prestigious position of head bartender at the Nomad Bar at the Nomad hotel.
