Creative use of social media, jet-setting bartenders, and the insatiable awards-driven PR machine would lead us to believe cocktail bars everywhere are packed to the rafters 7/7. It can be disheartening to scroll through your feed looking out from behind an empty bar on a Thursday night, but the hard reality is that most bars are not smashing successes from day one. Others never achieve financial stability nor success despite hard work, press, awards, and peer recognition. This seminar will explore some ways bar owners have reacted when finding themselves running a business that isn’t living up to its expected potential, discuss learning how to review your business on a daily basis, and detect when it’s time for a change. Cost cutting and layoffs? Investing in PR? Décor or concept changes? Outright sale of the business and a change of career path? Or the worst case: shut or being shut down! All of these and more will be discussed in this refreshingly candid seminar. Join us for a discussion with Josh Fontaine of Paris’ Quixotic Projects (Candelaria, Glass, Le Mary Celeste, Hero) who will be joined by Julie Reiner of New York’s Flatiron Lounge, Clover Club and Leyenda, and Mat Snapp, Beverage Director of the 44 restaurants of Fox Restaurant Concepts. Henrik Steen Petersen, formerly of Copenhagen Spirits and Cocktails and Moltkes Bar, will round out the panel by discussing how to face your expiration date like a professional, prepare your exit, and make sure your final night will be a happy one for the sake of your business partners, your employees, your guests, and yourself. Whether you will open a new bar, move behind the stick again or seek work as a brand manager, you will be judged on your latest exit! All four will talk us through their darkest hours as they’ve struggled to keep their businesses afloat, how they found the solutions that were right for their particular situation, and how they have become better business owners as a result. Expect shockingly blunt talk and advice from people who have faced the challenge head on and survived to tell the tale. If you’ve ever looked out into the void, this seminar is for YOU. There will be a significant Q&A period; attendees are expected to bring specific questions regarding their own businesses for the panel to address.
