Sean Muldoon is Managing Partner of The Best Bar in the World Hospitality Consulting (BBITW), the creative force behind New York’s The Dead Rabbit, GreenRiver in Chicago, the upcoming BlackTail at Pier A in New York and formerly Belfast’s The Merchant Hotel. He is an award-winning international barman and visionary who has raised the bar for what cocktails and bars can and should be. 

Sean is most renowned for The Dead Rabbit in Lower Manhattan, which he opened and manages with his business partner, Jack McGarry. The bar has won seven Spirited Awards from Tales of the Cocktail, including “World’s Best Bar,” “World’s Best Cocktail Menu” and “International Bartender of the Year” (Jack McGarry). Named after a 19th century street gang, The Dead Rabbit channels the era in its taproom, cocktail parlor and Occasional Room spanning three floors. Sean came up with its concept, service hallmarks, adjusted its landmarked 1828 structure and oversees its evolving award-winning cocktail menu.

Bringing its cocktail excellence to America’s Heartland, BBITW is collaborating with Union Square Events, the catering and venue hospitality business of Danny Meyer’s Union Square Hospitality Group, on GreenRiver, which celebrates the history of Irish-American culture in Chicago. Its cocktail menu tells the stories of legendary artists, inventors, activists, brutes, politicians, developers, and others who helped transform the city into a formidable metropolis following the Great Fire of 1871. Sean took the lead on developing GreenRiver’s overall concept and branding.

This summer, BBITW will launch BlackTail at Pier A, a new drinkery that recreates the elegant glories of an American bar in Havana set during Prohibition. It takes its name from the fleet of luxurious seaplanes of the era that ferried “dry” Americans to the “wet” island nation for strong libations. Sean, a long-time enthusiast of Ernest Hemingway and his sojourns in Cuba, spearheaded BlackTail’s creation and is overseeing its execution.

Previously, Sean was Bar and Potation Manager at Belfast’s The Merchant Hotel, which was declared World’s Best Cocktail Bar at Tales of the Cocktail 2010, thanks to his taking the excellence of drinks to unprecedented levels using artisanal ingredients and handcrafted techniques. Sean helped create The Connoisseurs Club that attracted luminaries such as Dale DeGroff, Sasha Petraske, Audrey Saunders, Gary Regan, Dave Wondrich, Simon Difford, Wayne Curtis, Robert Hess, Tony Conigliaro, Jeff Berry and many others.

Prior to The Merchant Hotel, Muldoon had his own business venture, The Perfect Drinks Company, a one-stop consultancy and event bartending service that contributed considerably to various establishments of that time and received major bar awards. His work experience also includes Botanic Inns, where he was first introduced to cocktails and mixed drinks and decided to make bartending his career path. He met his future mixology mentee, Jack McGarry, while managing the bar, Northern Whig.

Sean first began his life behind the stick at a hotel near Aberdeen, Scotland. It was a means to support himself while pursuing his passion for music and the production of his own CD.
