Over the past nine years, Dan Sabo helped develop and run the beverage programs at some of New York’s top restaurants. He fostered the opening programs at Five Leaves, Nights and Weekends, Whitehall Bar +Kitchen, Rye, Artisanal, and Kampuchea, before adding his talents to the lineup at ISA, which was nominated for James Beard Best New Restaurant award in 2012. In late 2013, Sabo relocated to Los Angeles, CA, to serve as opening Director of Beverage & Bars for the Ace Hotel Downtown Los Angeles, encompassing beverage programs at Upstairs Rooftop Lounge, LA Chapter Restaurant, and The Mezzanine Cocktail Bar. The entire program at Ace Hotel DTLA earned a Top 10 nomination at Tales of the Cocktail 2015. Sabo has also subsequently assisted with the openings of Ace Hotel bar programs in Pittsburgh and New Orleans.

He is a lifetime member of the Museum of the American Cocktail, as well as a member of the USBG SoCal Chapter. Awards include winning William Grant and Sons Los Angeles May Mix Off (2015), People’s Choice at Bombay Sapphire’s Most Imaginative Bartender SoCal Regional Finals (2015), and 2nd Place at Bombay Sapphire MIB (2014 & 2015), Olmeca Altos Tahona Society National Finals (2015), Tequila Ocho Viva Sangrita SoCal Finals, and Grand Marnier Grand Masters California Finals.

Dan holds a B.A. from National Basketball Championship Winning Villanova University and an A.O.S. from the American Academy of Dramatic Arts. He currently resides in Los Angeles, CA, with his wife, Esther, their daughter, Cordelia, and their lovable wondermutt, Prudence.
